Instructions
  1. Preheat oven to 400º. In a large skillet, cook sausage over medium heat 6-8 minutes, breaking into crumbles. Remove and drain on paper towels. Wipe skillet clean. In a small bowl, whisk five eggs. Pour into skillet; cook and stir over medium heat until thickened. Remove from heat.
  2. In a large bowl, whisk flour, sugar, baking powder and salt. In another bowl, whisk remaining eggs, milk, chopped onion and oil until blended. Add to flour mixture. Fold in 2/3 cup cheese, sausage and scrambled eggs.
  3. Fill muffin cups three-fourths full. Sprinkle tops with remaining cheese. Bake 12-15 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pans.
