Instructions
- Make the filling: Combine 1 cup of Borden’s heavy whipping cream and ⅔ cup of sugar in a saucepan. Heat over low to medium heat, stirring frequently, until the mixture thickens (about 10-15 minutes). Let it cool slightly.
- Add the marshmallows and chocolate: Once the cream mixture has cooled slightly, add marshmallows and 1 cup of chocolate chips. Stir until the mixture is smooth.
- Prepare the graham cracker sandwiches: Lay out 24 graham cracker halves on a tray or surface. Drop the marshmallow-chocolate mixture by tablespoonfuls onto each graham cracker half. Spread evenly.
- Top and press: Place the remaining graham cracker halves on top of the mixture and gently press down to form a sandwich.
- Add more chocolate drizzle: Melt the remaining chocolate chips, then drizzle over the top of the graham cracker sandwiches.
- Decorate and chill: Add sprinkles on top of the drizzle if desired. Let the cookies stand for about 2 hours to firm up before inserting a pop stick into the center of each for a fun treat.
