Instructions
  1. In a large bowl, whisk together the cake flour, baking powder, baking soda, salt, cocoa powder and brown sugar until combined.
  2. In a separate bowl, stir together the eggs, milk, oil and vanilla extract until light and airy.
  3. Gradually add the wet ingredients to the dry ingredients and mix until just barely combined. Do not overmix!
  4. Add in desired amount of red food coloring and stir until evenly distributed throughout the batter.
  5. Heat an oiled griddle or skillet over medium heat. Using an ice cream scoop or measuring cup, drop about ¼ cup of batter onto hot surface for each pancake. Flip when bubbles start to form on the surface of each pancake (about 4 minutes). Cook for another minute or two before removing from heat.
  6. Serve with your favorite toppings such as butter and syrup or powdered sugar and enjoy!
